One of the classic recipes we love to cook at home is a Tagine. They can be cooked up from almost anything from fish, lamb, chicken and beef to goat, but this one is packed with fresh vegetables and red lentils. A perfect vegan option!
Ingredients:
Sweet potatoes, courgettes, carrots, red lentils, cherry tomatoes, vegetable stock, red onions, ground coriander, ground cumin, ground cinnamon, garlic, ginger, harissa paste, preserved lemons, green olives, parsley, fresh coriander, salt & pepper.
